What happens to the other options once a customer accepts one?

They’re automatically marked cancelled or expired, so your pipeline never shows stale, still-open options that were actually already lost.

Is there a record of what was negotiated before a deal closed?

Yes — every negotiation event (the term, the change requested, who approved it, and when) is logged and stays attached to the deal permanently.
